Herb and Mustard Crusted Rack of Lamb

A delicious recipe for Herb and Mustard Crusted Rack of Lamb:

 

Ingredients:

  • 2 racks of lamb (8 chops each)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper
  • 2 tablespoons olive oil

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the Dijon mustard, whole grain mustard, garlic, thyme, rosemary, parsley, salt, and pepper.
  3. Rub the mustard mixture all over the racks of lamb.
  4. Heat a large oven-safe skillet over medium-high heat and add the olive oil.
  5. Add the lamb racks to the skillet, fat side down, and sear for 2-3 minutes until browned.
  6. Flip the racks over and transfer the skillet to the preheated oven.
  7. Roast for 12-15 minutes for medium-rare, or until the internal temperature reaches 130-135°F (55-57°C).
  8. Remove the skillet from the oven and let the lamb rest for 5 minutes before slicing and serving.

Optional: Serve with roasted vegetables and a side of mashed potatoes. Enjoy!
